Homemade Granola Cereal

This homemade granola cereal is great for a healthy breakfast cereal with milk, on top of yogurt or as a mid-day snack with some chocolate. It is also an easy make-ahead meal for the kids with no sugar and very filling.
 
You can add fresh toppings when eating such as fresh berries, sliced bananas or apples, peanut butter or chocolate chips.
 
4 cups oatmeal
1 teaspoon salt
2 tablespoons cinnamon
2 tablespoons chia seeds
1 tablespoon ground flax seeds
½ cup coconut oil
1/3 cup honey
1 tablespoon vanilla
½ cup raisins
½ cup chopped pecans
½ cup chopped walnuts
½ cup chopped cashews
½ cup coconut flakes
 
-Preheat oven to 350 degrees.
-Combine oatmeal, salt, cinnamon, chia seeds and flax seeds in a mixing bowl. Mix with a spatula.
-Add in coconut oil (liquid), honey and vanilla. Stir well.
-Pour mixture into a 9x13 glass or cast iron baking dish and spread it out in an even thin layer.
-Bake for 20 minutes.
-While baking, add all of the nuts into a food processor and chop nuts into a coarse mixture.
-Mix together nut mixture and coconut flakes.
-Mix into oatmeal mixture and bake for an additional 15 minutes. Mix in raisins.
-Allow to cool completely and transfer to a large mason jar or airtight container.
-Store at room temperature for two weeks or in refrigerator for a month. You can even freeze it for up to six months.
